Jedi Knights, like the Order they served, were guardians of peace and justice in the Galactic Republic, and served in key military command roles during the Clone Wars. Master Porter Engle believed that any Jedi worthy of the title of knight put time into planning unarmed defense in case they lost their lightsaber. In the hierarchy of the Order, a Jedi Knight was lower than a Jedi Master and needed to prove themself worthy of the higher rank.
